Let's see how to make crispy and crunchy aloo pakoda. Let's peel and make slices of potato first.
For that I have taken 1 1/2 cup water in a bowl. Add 1 tbsp salt in it.
We will soak potato slices for pakoda in this water. For that a little more salt is required.
As potato has tendency to absorb salt. Take a potato. I have washed this potato under running water really good.

Make thin slices with the help of knife. Do not make too thick slices. But do not make thin slices like wafers.
Like so. Slices should have this much thickness. 20 slices can be made from 1 medium size potato.
I count while making slices. The reason behind this is the judgement of pakoda batter goes wrong.
Either potato slices fall short or batter is left extra. To avoid that I mostly count slices while cutting.
And I use flour in proportion with number of slices. If I have 20 slices, then I use 20 tsp chickpea flour.
20 tsp means, the spoon that we use for tea. That much flour is enough. As we also add some rice flour in it.
I have dropped potato slices in salt water. Keep it aside. I have sliced the potato. Make batter for pakoda.
Take 20 tsp chickpea flour in a bowl. Add 2 tbsp rice flour. Rice flour gives nice crisp to pakoda. Add turmeric powder, salt
A little less than 1/2 tsp red chili powder. I don't add more red chili powder for poato pakoda. Add a pinch of baking soda.
Mix everything well together. After mixing dry ingredients well, add a little water at a time and make a little thick batter.
So that potato will get nice coating of this batter. Or potato and batter won't be separated.
Batter for potato pakoda is already. You can see the consistency. This batter should be a little thick.
Add lots of finely chopped coriander leaves and mix well. Let it rest for about 10-15 minutes.
I have rested the potato pakoda batter for about 15-20 minutes. Heat up oil in a pan.
Take potato slices out of water, drain them properly and drop them in pakoda batter.
Try to drain the water from slices so that the pakoda batter won't become thin.
I mostly drop pakoda in oil with the halp of spoon. Coat the slices really good with batter from all sides.
Drop pakodas one by one in hot oil. Like so. Flip over pakodas after frying for about 2 minutes.
Pakodas have got nice coating and the batter around potato is also nicely puffed up.
After flipping over, fry pakodas for about 3-4 minutes form another side.
I have fried pakodas well from both sides for about 4-5 minutes. Tempting aroma!! Pakodas have puffed up well.
It has got nice coating of batter. Take these out into a dish. Hopefully you can see puffed up pakodas.
It has got fantastic coating. Pakodas are looking tempting. Fry remaining pakodas similarly.
Crispy and crunchy potato pakodas are already. You can see nice coating and has puffed up really good.

Stir well and let the salt dissolve in it. • Take potato and wash it really good. Peel and make thin slices of it. • Dip these slices in salt water. • In a bowl take chickpea flour and add rice flour. • Add turmeric powder, salt, red chili powder, and baking soda. • Mix well and add a little water at a time and make batter. • Add coriander leaves and mix well. The batter should be a little thick. • Rest the batter for about 10-15 minutes. • Heat up oil in a pan. • Take slices out of salt water, drain water well and drop them into batter. • Coat slices really good from all sides and drop them into hot oil with the help of spoon. • After frying for about 2 minutes, flip bhajji over and fry for about 3-4 minutes from another side as well. • Take bhajji out of oil into a plate. • Batata bhajji are already.
